Sweet Potato Hash

Hi friends!

Today I’ve got an awesome breakfast recipe for you!  If you haven’t seen this recipe before, know that I didn’t create it myself from scratch.  I’ve seen a few variations of this recipe floating around on the interwebs, but I thought I’d share my version of it in case you wanted something new.  Or if you haven’t seen any versions of it before, then you could try my version and see if you like it (or just pretend that I made it up haha!).

This is a great breakfast or lunch (or really anytime meal) option.  Full of veggies and healthy carbs as well as protein and healthy fats.  It has it all!  I even like to add a little spice to this hash with jalepeño and cumin.  It’s super easy to make it ahead of time and eat it throughout the week.  Even the hubs and the babe approve of it!  I call that a win win!

You could even take it up a notch and put it on some toast! How yummy would that be?! Hope you enjoy this quick, delicious breakfast!

Sweet Potato Hash
This yummy breakfast dish can be made ahead of time and heated up throughout the week. It's a great way to get some solid protein and healthy veggies in at the beginning of your day! It's can be adapted to take any spices you want as well, so if you don't like it super spicy just leave out the jalapeño! Or add in some different spices to your liking! Enjoy!

  1. Chop the veggies into bite sized pieces.
  2. Sauté the sweet potato in olive oil covered until it begins to soften; about 15 minutes. Add in red onion, red and yellow pepper, and jalapeño and mix in 1 tsp of cumin and salt and pepper to taste. sauté covered until they begin to soften as well; about 10 min.
  3. Once everything is incorporated and softened to your desire, make 4 holes in the veggies in the pan. Crack the eggs into these wells and cook to your liking. I like a good, runny egg that will seep into all the veggies. MMMM!!
  4. I like to top it with salsa or a chile verde sauce if we have it on hand.
